Lettuce is great for more than just shreds on sandwiches. This common vegetable provides a crisp crunch with its broad leaves. Color is of high importance to lettuce: those with dark green leaves are often far more nutritious. In general crop growth, lettuce is cultivated as either butterhead, crisphead (iceberg), looseleaf, or romaine. The best way to store lettuce is within its own bag inside the refrigerator to preserve its natural crispiness. Although it is commonly eaten raw, other ways to utilize it are to lightly steam and grill. Wrapping veggies inside a large leaf makes for a great veggie wrap! Lettuce is great for health because like zucchini and cucumber it is 95% water. Dark leaves are excellent sources of Vitamin C, folate, and beta-carotene.
